There are a lot of reasons to love a good spring roll. For one, they’re incredibly versatile – you can fill them with just about anything you have on hand. They’re the perfect meal for when you want something light and healthy but satisfying to eat. And they’re fun to make, especially if you’ve got younger cooks with you in the kitchen.
What is a Spring Roll
Traditionally, Vietnamese fresh spring rolls, known in Vietnam as ‘Gỏi cuốn’, bring together fresh vegetables, herbs, and proteins wrapped in a translucent rice paper. Often, they contain a mixture of shrimp and pork. They’re light, healthy, and perfect for any occasion.
For this recipe, we’re using Prime Shrimp Soy Ginger. The shrimp take just eight minutes to cook in bag, soaking up flavor from their bath of fragrant soy ginger butter. Then, you’ll remove the shrimp and chill, keeping the butter to make a savory dipping sauce that is dangerously addictive.
How to Make Spring Rolls
Although a well-made fresh spring roll looks impressive, they’re surprisingly simple to make at home. The rice paper comes in hard sheets that look almost like plastic. You’ll just dunk them in water to soften, then place in your ingredients and roll it up like a tiny burrito.
Cook one pouch of Prime Shrimp Soy Ginger according to package directions. While the shrimp cooks, prepare your vegetables and herbs, ensuring everything is thinly sliced and ready to be rolled.
Separate the cooked shrimp from the butter sauce. Set the butter aside and let the shrimp cool in the fridge.
To make the sauce, mix the soy ginger butter with the hoisin sauce and chopped green onion. If you’d like to add some spice, stir in chopped Thai chiles. Set the sauce aside.
Dip a rice paper wrapper into warm water for a few seconds to soften.
Lay the wrapper flat and place lettuce in the center.
Add a small handful of vermicelli, followed by the veggies, herbs, and a 2/3 shrimp.
Fold the sides of the wrapper inward, then tightly roll from the bottom up, like a burrito.

What Should I Dip My Spring Rolls In?
Because fresh spring rolls tend to me made with more mild, unseasoned ingredients, the sauce is your chance to really bring the bold flavors to your dish. The compound butter in our soy ginger shrimp makes a great base for a dipping sauce, but this fresh spring roll recipe goes perfectly with any flavor profile you like, so feel free to use your imagination. Hoisin sauce, sriracha mayo, soy sauce, or peanut sauce are popular choices.
